This coffee from Ethiopia's Guji region is a Grade 2 washed coffee, sourced from cherry picked by 450 smallholder farmers near Shakiso. The beans are traditional Ethiopian heirloom varieties grown at elevations between 1800 and 2100 masl. At the Wersi washing station, they are depulped within hours of harvesting and then undergo tank fermentation for 36-48 hours. After the mucilage breaks down, the beans are meticulously washed with fresh water and dried on raised beds under parabolic shade nets for 5-7 days. In Ethiopia, coffee grading is based solely on cup quality and defects, rather than size, with Grade 1 and Grade 2 both considered "Specialty" at origin. Grade 2 washed coffees share similar flavor characteristics to their G1 counterparts, but at a more accessible price.
